Nutrient Dense Pistachio Oat Squares

Ingredients


  • 1 cup raw shelled pistachios

  • 1 cup rolled oats*

  • ½ teaspoon sea salt

  • ¼ cup maple syrup (plus more for drizzling)

  • 2 tablespoons olive oil

  • ⅓ cup unsweetened coconut flakes

  • Additional handful of chopped pistachios for the topping


*Use certified gluten-free oats if needed.


Directions


  1. Preheat & Prep: Preheat your oven to 350°F (175°C) and line an 8-inch square pan with parchment paper for easy removal.

  2. Blend the Base: In a food processor fitted with the S blade, combine the pistachios, oats, and salt. Process for about 30 seconds until the mixture resembles a coarse meal.While the processor is running, drizzle in the maple syrup and olive oil. Continue blending until the mixture forms a crumbly, slightly wet dough.

  3. Assemble & Bake: Press the dough evenly into the prepared pan. Sprinkle the top with coconut flakes and the remaining chopped pistachios.Bake for 10–12 minutes, or until the coconut turns golden brown and the dough is cooked through. Avoid overbaking to keep the squares soft and chewy.

  4. Cool & Cut: Once baked, allow the pan to cool completely. Using the parchment paper, lift the dough out of the pan and place it on a cutting board. Slice into squares.

  5. Add Sweetness (Optional): For an extra touch of sweetness, drizzle a little more maple syrup over the top of the squares before serving.

  6. Store: Keep the squares in a sealed container at room temperature for up to a week—if they last that long!
